For all grilled chicken lovers, here’s a delicious roasted chicken thigh dish with a flavorful marinade, paired with a medley of tasty vegetables. Perfect for a hearty and satisfying lunch!




Ingredients 🍗🥗🥔

  • 4 chicken thighs
  • ½ kg baby potatoes, halved
  • 3 small carrots, peeled and thinly sliced
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ cup water

For the Marinade:

  • 2 tablespoons mustard
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste

Preparation Steps 🍗🥗🥔

  1. Preheat the Oven:
    Preheat your oven to 225°C (437°F).

  2. Prepare the Vegetables:
    In an oven-safe baking dish, toss the baby potatoes and carrots with 1 tablespoon of olive oil and ¼ teaspoon of salt. Spread them out evenly, then place the chicken thighs on top.

  3. Make the Marinade:
    In a small bowl, whisk together all the marinade ingredients: mustard, olive oil, balsamic vinegar, honey, garlic powder, dried thyme, salt, and black pepper.

  4. Marinate and Bake:
    Pour the marinade over the chicken thighs and vegetables, ensuring everything is well coated. Add ¼ cup of water to the dish for extra moisture.

  5. Bake:
    Bake in the preheated oven for 45–50 minutes. Check the chicken after 30 minutes; if the skin becomes too brown, cover the dish with aluminum foil.

  6. Serve Hot:
    Garnish with freshly chopped parsley and serve alongside your favorite sides.
