 : Ingredients

  • 10 cups (approximately 2 bags) mesclun or spring mix
  • 4 cups radicchio
  • 4 cups arugula
  • 2 cups Belgian endive
  • 1/4 cup pitted black olives
  • 1 pound shrimp
  • 1 seedless orange, peeled and sliced
  • 1 tablespoon minced shallots
  • 1 teaspoon freshly grated orange zest
  • 1/2 cup orange juice
  • 1/4 cup apple cider vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon chopped fresh oregano
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt

 Directions :

In a large mixing bowl, combine the mesclun, radishes, arugula, Belgian endive, and black olives. Sit aside.

Grill or broil the shrimp until they are completely cooked and opaque.

In a small bowl, whisk together orange juice, apple cider vinegar, extra virgin olive oil, chopped shallots, fresh grated orange peel, chopped fresh oregano, Dijon mustard, and salt to make the citrus orange sauce.

Pour the dressing over the salad mixture, and toss gently to coat.

Arrange the vegetables in a serving dish, then place the cooked shrimp on top, and garnish with orange 

slices.
