Easy Waffle Grilled Cheese with Chicken, Pesto, and Peppers: A Step-by-Step Guide
Get Your Waffle On:
Gather your dry ingredients: In a big bowl, mix your flour, baking powder, baking soda, and a pinch of salt.
Whisk together your wet crew: In another bowl, combine buttermilk, eggs, and melted butter.
Marry the wet and dry: Pour the wet ingredients into the dry and stir until everything's smooth and there are no lumps hiding. Let this batter rest for 5 minutes while your waffle iron gets nice and hot.
Waffle Time!: Pour about a third of a cup of batter into your hot waffle iron and cook it according to your machine's instructions until it's golden brown and crispy. Move the cooked waffle to a wire rack and repeat with the rest of the batter.
Grillin' Chicken for the Goodness:
Heat things up: Turn your stovetop grill pan to medium-high heat.
Season your chicken squad: Season both sides of your chicken breasts with salt, pepper, and a touch of cayenne pepper for a kick.
Butter up and grill: Add some butter to your pan and cook the chicken in batches for 2-4 minutes per side, or until it's cooked through. Let it rest on a cutting board for 10 minutes, then slice it thinly.
The Grand Grilled Cheese Assembly:
Pesto Power: Spread some yummy pesto on each waffle.
Mozzarella Mountain: Top each waffle with 3 slices of mozzarella cheese.
Flavor Fest: Pile sliced chicken, red peppers, and fresh basil on top of three of the waffles.
Sandwich Time!: Close the deal by placing the remaining pesto-and-cheese waffles on top, creating delicious grilled cheese sandwiches.
Griddle Magic:
1- Get the griddle going: Heat your griddle or non-stick skillet over medium-low heat.
2- Melting Magic: Melt some butter on the griddle and place one waffle sandwich on it.
3 - Crispy Perfection: Cook the sandwich for 2-3 minutes per side until it's golden brown and crispy.
4 - Keep it Warm: Once the cheese is melted and bubbly, transfer the sandwich to a wire rack and keep it warm in a 250°F oven while you cook the others.
Repeat and Enjoy: Add more butter to the griddle and cook the remaining sandwiches. Cut them into wedges and serve immediately, sharing the love with two triangles per person!
Enjoy your delicious and flavorful waffle grilled cheese sandwiches😋😋!
